3 medium sweet potatoes (yams)
¾ cups butter
2 ½ cups sugar
1 teaspoon cinnamon
1 tablespoon vanilla
1 teaspoon nutmeg
3 eggs
1 can – 14 ounces – evaporated milk
1 pie crusts – 9 inches.
Boil the potatoes and mash together with the butter. Add sugar, cinnamon, vanilla and nutmeg.
In a separate bowl beat the eggs and milk. Pour this over the potato mixture and stir together.
Pour into the pie shells.
Bake for 45 minutes at 400 degrees.
