Recipe #162: Marzipan or Almond Icing

for 7" square or 8" round cake

A marzipaned cake should be left for several days before the Royal Icing is applied to allow the oilyness to dry out.

12 oz ground almonds
6 oz  icing sugar
6 oz castor sugar
1/3 tsp pure almond extract
1 tsp lemon juice
1 tsp brandy
2 eggs - size 2
1 egg - size 2 separated
