Recipe #52: Roasted Chicken with Garlic

Serves 2

3-4 lb roasting chicken
Salt and pepper to taste
2-3 heads of fresh garlic
½ cup dry white wine
½ cup chicken stock
2 tbsp  extra virgin olive oil
1 tbsp (15 mL) butter

preheat oven to 375'F

Season chicken inside and out with salt pepper.

Separate garlic cloves from the heads.

Stuff the chicken with the garlic cloves.

Truss the chicken. 

Place in a roasting pan with the wine, stock, olive oil and butter, and any extra garlic cloves.

Roast the chicken, uncovered, until golden brown and juices run clear, about an hour and 30 minutes.
Baste chicken regularly with juices from the pan.

Serve with the garlic and reduced juices, seasoned. Serve with roasted potatoes and green salad.
