1 CUP DRY GREEN LENTILS
3 CUPS WATER
1 28-FL.OZ. CAN TOMATOES, CUT UP
- TBSP. TOMATO PASTE
- MEDIUM POTATOES, PEELED AND DICED
3 MEDIUM CARROTS, CHOPPED
- STALKS CELERY, CHOPPED
- MEDIUM ONIONS, CHOPPED
1/2 TSP. SALT
1/4 TSP. PEPPER
1 TSP. DRIED OREGANO, CRUSHED (OPTIONAL)
3 TBSP. PARSLEY, DRIED OR FRESH
2 TSP. BROWN SUGAR
- In a large saucepan, combine lentils, water, tomatoes and tomato paste; bring to boil and simmer gently for 30 minutes, stirring frequently.
- Add potatoes, carrots, celery, onions, salt, pepper and oregano; simmer for 45 minutes or until lentils and vegetables are tender.
- Stir in parsley and sugar; simmer for 5 minutes. Enjoy!
